Session Descriptions

Come talk a walk with Happel and learn about identifying plants that are edible and ones that can be used for medicinal purposes. Bring your phones, so you can take photos and learn how to identify them yourself.

Learn how to produce the best tasting, nutrient-dense chicken you have ever had in a way that respects the animal allowing it to express its individual God-given characteristics:

  • How to build predator-safe movable shelters
  • How to humanely harvest your birds: Butcher, scalding, plucking, evisceration, chilling and packaging

The possibilities are endless!  From sourdough bread to kombucha, and so much more in between.  You will see and taste a few items, each containing a variety of healthy bacteria that have been shown to assist in creating a healthy immune system.  Make and take a jar of German Sauerkraut or its spicy counterpart from Korea – kimchi.  You will make a quart jar of coleslaw or kimchi to take home to ferment for about 10 days.  

In my home one will usually find jars of fermented mustard, mayonnaise, garlic, sourdough bread, kombucha, tomatoes, and many more.  Come, taste, learn, and take something fun home!

Basic First Aid class designed for individuals who want to be prepared to respond in emergency situations. Basic First Aid Techniques: how to handle common injuries and medical emergencies, including burns, cuts, fractures, and more. Certification Opportunity: While the class is free, participants have the option to receive certification for a nominal fee.

Basic overview of radio theory, different radio systems, how to get your GMRS license, how to use your GMRS and GMRS repeaters, hands-on demo with different GMRS radios and local repeaters.

Learn how to safely operate, store and shoot a semi-automatic and revolver to include gun nomenclature, function, types of ammo, shooting fundamentals, cleaning and maintenance. Participants can shoot a course of fire if they bring their own firearm and ammo (please transport according to state and local laws) or for a small fee, they can use an on-site gun and purchase ammo to shoot. $10 for .22. Other calibers may be available for additional cost.

What happens if the internet or cell phone service is no longer available?  Amateur radio has been around for over 100 years.  Learn some of the basic principles of radio, the CORAC hub-and-spoke communication model, and see a demonstration of amateur radio, and how you can listen in on shortwave if you don’t have a full amateur radio setup.

Where am I? Where do I want to go ? How will I get there? Those 3 questions will be answered through an in depth review of the use of map, compass and navigation skills. There will also be some coverage of dedicated GPS devices and cell phone apps.

Forget the Zippo lighter. When you’re in the wild, you should have  2 or more methods of producing a flame and you should know how to transfer that into a functional working fire.

This course will demonstrate different methods of producing a flame and different fire lays and improvised stoves depending on what your needs are, cooking, warmth, signal, etc…

Water purification techniques such as filtering, boiling, and evaporation methods will also be covered during this session. Purification devices designed for various outdoor and emergency situations such as a life straw will also be demonstrated.

If you learn how to live successfully during a crisis, bad people will try to take your stuff.  This class will cover the principles of defense as they relate to both a fixed location (establishing and maintaining security) and personal self-defense (armed and unarmed).  Speaker previously guarded nuclear sites, was an instructor at the Joint Law Enforcement Training Center, a SWAT commander with multiple combat deployments and an Instructor at the Marine Corps Command and Staff College.

In this class you will learn the difference between sprouts and microgreens.  The hands-on portion will focus on growing your own nutritious broccoli sprouts.  University of Maryland put out a study that verified broccoli sprouts to be approximately 40% more nutritious, ounce for ounce, than their adult counterparts.  You will go home with a ready to grow jar of broccoli sprouts, kale, or radish, depending on your choice.  Additionally, we will cover several methods for sprouting and growing microgreens.  In addition, there will be seeds for you to purchase at my cost so you can get started immediately at home.  There will be some already sprouted seeds for you to see and taste.
